These knives are designed to cut and joint meat. A cleaver is a heavyweight butcher’s knife which will allow you to cut through bone as well as allowing for the jointing of a large meat purchase - perhaps half a lamb. If a cleaver is too much for your task, you will need a butcher's knife. Supposing you want to cut steaks from a large piece of beef, you will need a cimeter knife.
