A turning knife (or peeling knife) is a short-bladed knife used for shaping produce such as carrots and cucumbers. They have a curved blade at the tip, which not only makes them perfect for shaping, but for peeling produce of all shapes. Blades range in length from approximately 6cm to 11cm.
